Fresh non-pasteurised Kaluga Hybrid caviar, returning to Australia 13 July. A cross of Amur (Acipenser schrenckii) and Kaluga (Huso dauricus) sturgeon, it delivers large firm pearls above 3.0mm with a mellow buttery character and a gentle nutty finish. Cured lightly at 3.5% salt and never pasteurised.
Harvested fresh and delivered chilled overnight across Australia. 30g serves 2, 50g serves 3 to 4, 100g serves 7 to 8.
